Ingredients:

  • 1.75 lb bone-in, skin-on chicken thighs
  • 1 tbsp extra virgin olive oil
  • 1 tsp baking powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried oregano
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper

Instructions:

  1. Pat the chicken thighs extremely dry on all sides using paper towels to ensure maximum skin crispiness.
  2. In a small bowl, whisk the baking powder, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Lightly coat the chicken in olive oil, then dredge thoroughly in the seasoning mixture.
  3. Preheat the air fryer to 400°F (200°C). Place thighs in the basket, skin-side down, and air fry for 10 minutes.
  4. Flip the chicken to skin-side up. Continue cooking for 8-10 minutes until the skin is bubbly and dark gold, and the internal temperature reaches 175°F (80°C).
