Ingredients:

  • 4 medium sweet potatoes (approx. 8 oz / 225g each)
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 cup plain Greek yogurt
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1 cup canned black beans, rinsed and drained
  • 1/2 tsp smoked paprika
  • salt to taste
  • black pepper to taste

Instructions:

  1. Wash the sweet potatoes thoroughly and pat them completely dry to ensure a crispy skin.
  2. Use a fork to prick 5–6 deep holes across each potato to prevent internal pressure build-up.
  3. Rub each potato with olive oil and sprinkle generously with kosher salt.
  4. Place potatoes in the air fryer basket in a single layer with space between them for air circulation.
  5. Set the air fryer to 400°F (200°C) and cook for 35–40 minutes until the skin is wrinkled and a knife slides into the center without resistance.
  6. Slice each potato lengthwise down the center and gently squeeze the ends to fluff the interior.
  7. In a small bowl, mix Greek yogurt, black beans, and smoked paprika, then scoop the mixture into the center of each potato.
  8. Top with shredded cheddar cheese and return to the air fryer at 400°F (200°C) for 2–3 minutes until the cheese is melted.
  9. Garnish with chopped fresh chives and season with salt and black pepper to taste.
