Ingredients:
- 4 medium sweet potatoes (approx. 8 oz / 225g each)
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 cup plain Greek yogurt
- 1 cup shredded sharp cheddar cheese
- 1/4 cup chopped fresh chives
- 1 cup canned black beans, rinsed and drained
- 1/2 tsp smoked paprika
- salt to taste
- black pepper to taste
Instructions:
- Wash the sweet potatoes thoroughly and pat them completely dry to ensure a crispy skin.
- Use a fork to prick 5–6 deep holes across each potato to prevent internal pressure build-up.
- Rub each potato with olive oil and sprinkle generously with kosher salt.
- Place potatoes in the air fryer basket in a single layer with space between them for air circulation.
- Set the air fryer to 400°F (200°C) and cook for 35–40 minutes until the skin is wrinkled and a knife slides into the center without resistance.
- Slice each potato lengthwise down the center and gently squeeze the ends to fluff the interior.
- In a small bowl, mix Greek yogurt, black beans, and smoked paprika, then scoop the mixture into the center of each potato.
- Top with shredded cheddar cheese and return to the air fryer at 400°F (200°C) for 2–3 minutes until the cheese is melted.
- Garnish with chopped fresh chives and season with salt and black pepper to taste.
