Ingredients:

  • 1/2 cup (125g) creamy peanut butter
  • 3 tbsp (45ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 1 cup (90g) rolled oats
  • 1 tbsp (10g) chia seeds
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (70g) firm apple, finely diced
  • 1 tsp (5ml) fresh lemon juice

Instructions:

  1. Dice the apple into small, uniform cubes and toss with lemon juice in a small bowl to prevent oxidation and moisture seepage.
  2. In a medium mixing bowl, stir together peanut butter, maple syrup, vanilla extract, and salt until the texture is smooth. Microwave for 15 seconds if the peanut butter is too stiff.
  3. Fold in the rolled oats, chia seeds, and cinnamon using a spatula until no streaks of peanut butter remain and the mixture holds its shape.
  4. Gently fold in the diced apples, avoiding over-mixing to prevent the fruit from releasing excess juice.
  5. Scoop approximately 1 tablespoon of dough and roll into tight spheres. Place on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes.
