- 1/2 cup (125g) creamy peanut butter
- 3 tbsp (45ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) fine sea salt
- 1 cup (90g) rolled oats
- 1 tbsp (10g) chia seeds
- 1 tsp (2g) ground cinnamon
- 1/2 cup (70g) firm apple, finely diced
- 1 tsp (5ml) fresh lemon juice
Instructions:
- Dice the apple into small, uniform cubes and toss with lemon juice in a small bowl to prevent oxidation and moisture seepage.
- In a medium mixing bowl, stir together peanut butter, maple syrup, vanilla extract, and salt until the texture is smooth. Microwave for 15 seconds if the peanut butter is too stiff.
- Fold in the rolled oats, chia seeds, and cinnamon using a spatula until no streaks of peanut butter remain and the mixture holds its shape.
- Gently fold in the diced apples, avoiding over-mixing to prevent the fruit from releasing excess juice.
- Scoop approximately 1 tablespoon of dough and roll into tight spheres. Place on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes.
