Ingredients:
- 4 slices (120g) Sourdough or Multigrain bread
- 1 tbsp (14g) Unsalted butter, softened
- 4 oz (113g) Full-fat cream cheese, softened
- ½ tsp (2.5ml) Lemon juice
- ¼ tsp (1.5g) Garlic powder
- 1 large (150g) Ripe avocado
- 1 tsp (5ml) Lemon juice
- ¼ tsp (1.5g) Sea salt
- ⅛ tsp (0.7g) Cracked black pepper
- 4 slices (40g) English cucumber, thinly sliced
- 2 leaves (10g) Fresh baby spinach or sprouts
Instructions:
- Butter the outer sides of your bread slices. Toast them in a skillet over medium heat or in a toaster until they are golden-brown and feel rigid to the touch.
- In a small bowl, whisk the cream cheese, lemon juice, and garlic powder until smooth. Spread a thick, even layer of this mixture onto the inner side of each toasted slice, ensuring it reaches the edges.
- In a separate bowl, mash the avocado with lemon juice, salt, and pepper until chunky-smooth. Spread the avocado over the cream cheese layer.
- Top the avocado with cucumber slices, spinach or sprouts, and optional protein (turkey or salmon).
- Press the two halves together firmly and slice diagonally using a serrated knife.
