Ingredients:

  • 4 slices (120g) Sourdough or Multigrain bread
  • 1 tbsp (14g) Unsalted butter, softened
  • 4 oz (113g) Full-fat cream cheese, softened
  • ½ tsp (2.5ml) Lemon juice
  • ¼ tsp (1.5g) Garlic powder
  • 1 large (150g) Ripe avocado
  • 1 tsp (5ml) Lemon juice
  • ¼ tsp (1.5g) Sea salt
  • ⅛ tsp (0.7g) Cracked black pepper
  • 4 slices (40g) English cucumber, thinly sliced
  • 2 leaves (10g) Fresh baby spinach or sprouts

Instructions:

  1. Butter the outer sides of your bread slices. Toast them in a skillet over medium heat or in a toaster until they are golden-brown and feel rigid to the touch.
  2. In a small bowl, whisk the cream cheese, lemon juice, and garlic powder until smooth. Spread a thick, even layer of this mixture onto the inner side of each toasted slice, ensuring it reaches the edges.
  3. In a separate bowl, mash the avocado with lemon juice, salt, and pepper until chunky-smooth. Spread the avocado over the cream cheese layer.
  4. Top the avocado with cucumber slices, spinach or sprouts, and optional protein (turkey or salmon).
  5. Press the two halves together firmly and slice diagonally using a serrated knife.
