Ingredients:

  • 1 thick slice of sprouted grain bread
  • 1/2 teaspoon extra virgin olive oil
  • 1/2 ripe Hass avocado
  • 1 teaspoon fresh lime juice
  • 1/8 teaspoon sea salt
  • 1 pinch red pepper flakes
  • 1 large egg
  • 1/2 teaspoon butter
  • 2 slices heirloom tomato
  • 1 pinch fresh cracked black pepper

Instructions:

  1. Toast 1 slice of sprouted grain bread until it is dark golden and rigid.
  2. Brush 1/2 teaspoon olive oil onto the warm toast immediately.
  3. Scoop 1/2 Hass avocado into a small bowl and add 1 teaspoon lime juice and 1/8 teaspoon sea salt.
  4. Mash the avocado mixture using a fork until mostly smooth but with a few small chunks remaining.
  5. Spread the avocado mash evenly across the toasted bread, reaching all the way to the edges.
  6. Melt 1/2 teaspoon butter in a small skillet over medium low heat until it begins to foam and sizzle.
  7. Crack 1 large egg into the skillet and cook for 3 minutes until the whites are opaque and the edges are lacy.
  8. Place 2 slices of heirloom tomato directly onto the avocado layer.
  9. Slide the fried egg on top of the tomatoes gently.
  10. Garnish with 1 pinch red pepper flakes and 1 pinch fresh cracked black pepper.
