Ingredients:
- 2 cups (180g) old fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 1 1/2 cups (360ml) milk
- 1/3 cup (80ml) pure maple syrup
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 medium (300g) apples, peeled and diced
- 1 tbsp (15g) butter, melted
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with butter or oil.
- In a large bowl, whisk together the oats, baking powder, cinnamon, and salt.
- Stir in the milk, maple syrup, egg, and vanilla extract until just combined. Note: Over mixing can make the base too dense.
- In a separate small bowl, toss the diced apples with melted butter and the remaining cinnamon.
- Fold the cinnamon coated apples into the oat mixture.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 35-40 minutes until the edges pull away from the sides and the top is light golden brown.
- Let the casserole rest for 5 minutes before slicing.
