Ingredients:

  • 2 tbsp cream cheese, softened
  • 1 tsp lemon juice
  • 4 oz deli turkey breast, thinly sliced
  • 1/4 cup shredded carrots, finely grated
  • 1/4 cup baby spinach, finely chiffonaded
  • 2 slices mild cheddar cheese
  • 2 small whole-wheat tortillas

Instructions:

  1. Lay the tortillas flat on your cutting board. Spread 1 tbsp of softened cream cheese evenly across each tortilla, extending the spread all the way to the edges.
  2. Place the cheddar cheese slices over the cream cheese. Layer the deli turkey on top, followed by a thin, even scattering of shredded carrots and spinach ribbons.
  3. Starting from the bottom, roll the tortilla tightly toward the top. Use your fingers to press down firmly as you go. Wrap the finished roll in plastic wrap for 5 minutes to set the shape.
  4. Using a sharp knife or pizza cutter, slice the roll into rounds approximately 1/2 inch thick.
