Ingredients:
- 2 cups (300g) fresh blueberries
- 1/4 cup (50g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
- 2 cups (480ml) heavy whipping cream, cold
- 1 can (14 oz / 397g) sweetened condensed milk
- 8 oz (225g) full-fat cream cheese, softened to room temperature
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.25g) salt
- 1 cup (120g) graham cracker crumbs
- 2 tbsp (28g) unsalted butter, melted
- 1 tbsp (12g) brown sugar
Instructions:
- Combine blueberries, sugar, and lemon juice in a small saucepan over medium heat.
- Simmer for 8–10 minutes, stirring occasionally, until the berries burst and the liquid thickens into a syrupy consistency.
- Remove from heat, stir in vanilla, and let it cool completely in the fridge.
- In a medium bowl, beat the softened cream cheese until smooth and lump-free.
- Slowly pour in the sweetened condensed milk and vanilla, whisking until the mixture is glossy.
- In a separate chilled bowl, whip the heavy cream and salt until stiff peaks form.
- Gently fold the whipped cream into the cheesecake mixture using a spatula, ensuring you do not overmix.
- Mix the graham cracker crumbs, melted butter, and brown sugar together.
- Layer the cheesecake base with the cooled blueberry reduction and graham cracker crunch in a 9x5 inch loaf pan or airtight container, swirling with a knife.
- Freeze for 6 hours and 30 minutes until firm.
