Ingredients:
- 1 lb lean breakfast sausage
- 1 cup diced yellow onion
- 1 cup diced red bell pepper
- 2 cloves minced garlic
- 1 tbsp olive oil
- 8 large eggs
- 1/4 cup skim milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 32 oz frozen tater tots
- 2 cups shredded sharp cheddar cheese
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add the lean breakfast sausage, breaking it apart with a spatula until browned and cooked through.
- Toss in the diced onions and red bell peppers; sauté for 5–7 minutes until the vegetables are tender and the mixture smells aromatic.
- Stir in the minced garlic and cook for another 60 seconds to avoid burning. Remove from heat.
- In a large mixing bowl, crack the 8 eggs.
- Add the milk, salt, pepper, and smoked paprika.
- Whisk vigorously until the mixture is completely homogenous and slightly frothy.
- Preheat your oven to 375°F (190°C).
- Spread the cooked sausage and vegetable mixture evenly across the bottom of a 9x13 inch baking dish.
- Sprinkle 1 cup of shredded cheddar cheese over the meat layer.
- Pour the egg mixture over the top, ensuring it fills the gaps between the sausage.
- Arrange the frozen tater tots in neat rows across the surface, pressing them slightly into the egg, and top with the remaining 1 cup of cheese.
- Bake for 40-50 minutes until the eggs are set and the tater tots are golden brown and crispy.
