Ingredients:

  • ¾ cup (170g) unsalted butter
  • 1 cup (200g) packed light brown sugar
  • 2 large eggs
  • 2 tsp (10ml) vanilla extract
  • ½ tsp (3g) salt
  • ½ tsp (3g) baking soda
  • 2 cups (250g) all-purpose flour
  • 1 tsp (2g) ground cinnamon
  • 1 ½ cups (225g) peeled and diced tart apples

Instructions:

  1. Place the butter in a saucepan over medium heat. Melt it, then continue cooking, whisking constantly. The butter will foam up, then subside, and you will see small brown specks forming at the bottom. Once it smells nutty and turns a deep amber, remove it from the heat immediately.
  2. Whisk the brown sugar into the hot brown butter until smooth. Add the eggs one at a time, whisking vigorously until the batter looks glossy. Stir in the vanilla and salt.
  3. In a separate bowl, sift together the flour, baking soda, and cinnamon; gradually fold the dry ingredients into the wet mixture using a spatula until no streaks of flour remain.
  4. Gently fold in the diced apples, ensuring they are distributed evenly throughout the batter without crushing them.
  5. Line an 8x8 inch baking pan with parchment paper. Spread the batter evenly in the pan.
  6. Bake at 350°F (175°C) for 30–35 minutes until the edges are golden and the center is set.
