Ingredients:

  • 8 oz (225g) Philadelphia cream cheese, softened to room temperature
  • 2 tbsp (30g) unsalted butter, softened
  • 1 tbsp (15ml) mayonnaise
  • 1 tsp (5ml) fresh lemon juice
  • ½ tsp (3g) garlic powder
  • ¼ tsp (1.5g) salt
  • 8 slices (approx. 200g) white or whole wheat sandwich bread
  • 1 medium (150g) English cucumber, thinly sliced
  • 4 oz (115g) smoked salmon
  • 1 tbsp (15ml) fresh dill, chopped

Instructions:

  1. In a medium mixing bowl, combine the softened cream cheese, butter, and mayonnaise. Use a rubber spatula to fold in the lemon juice, garlic powder, and salt. Stir until the mixture is completely smooth and no lumps remain.
  2. Remove crusts from bread slices and lay them flat on a cutting board. Spread a generous, even layer of the cream cheese mixture across each slice, ensuring you reach the absolute edges of the bread.
  3. For Cucumber bites, layer thin cucumber slices over the spread. For Salmon bites, drape a thin piece of smoked salmon over the cream cheese and top with a sprinkle of fresh dill.
  4. Place a second slice of bread on top and press down very lightly.
  5. Using a serrated knife, use a gentle sawing motion to slice each sandwich into four equal squares or triangles.
