Ingredients:
- 8 oz (225g) Philadelphia cream cheese, softened to room temperature
- 2 tbsp (30g) unsalted butter, softened
- 1 tbsp (15ml) mayonnaise
- 1 tsp (5ml) fresh lemon juice
- ½ tsp (3g) garlic powder
- ¼ tsp (1.5g) salt
- 8 slices (approx. 200g) white or whole wheat sandwich bread
- 1 medium (150g) English cucumber, thinly sliced
- 4 oz (115g) smoked salmon
- 1 tbsp (15ml) fresh dill, chopped
Instructions:
- In a medium mixing bowl, combine the softened cream cheese, butter, and mayonnaise. Use a rubber spatula to fold in the lemon juice, garlic powder, and salt. Stir until the mixture is completely smooth and no lumps remain.
- Remove crusts from bread slices and lay them flat on a cutting board. Spread a generous, even layer of the cream cheese mixture across each slice, ensuring you reach the absolute edges of the bread.
- For Cucumber bites, layer thin cucumber slices over the spread. For Salmon bites, drape a thin piece of smoked salmon over the cream cheese and top with a sprinkle of fresh dill.
- Place a second slice of bread on top and press down very lightly.
- Using a serrated knife, use a gentle sawing motion to slice each sandwich into four equal squares or triangles.
