Ingredients:
- 4 medium organic Persian limes
- 6 cups filtered cold water
- 0.5 cup sweetened condensed milk
- 0.25 cup granulated monk fruit sweetener
- 2 cups crushed ice
Instructions:
- Thoroughly wash the limes to remove wax. Slice off the stem ends and cut each lime into eight uniform wedges.
- Place lime wedges into a high-speed blender with 6 cups of cold water. Pulse 5–8 times until the water is cloudy and fragrant. Do not blend continuously to avoid releasing bitter compounds from the pith.
- Immediately pour the mixture through a fine-mesh sieve into a large pitcher. Use a spatula to press the lime solids to extract all liquid, then discard the rinds quickly.
- Return the strained lime water to the blender. Add the sweetened condensed milk, monk fruit sweetener, and crushed ice.
- Blend on high speed for 20-30 seconds until the drink is frothy and fully emulsified. Serve immediately over extra ice.
