Ingredients:

  • 4 medium organic Persian limes
  • 6 cups filtered cold water
  • 0.5 cup sweetened condensed milk
  • 0.25 cup granulated monk fruit sweetener
  • 2 cups crushed ice

Instructions:

  1. Thoroughly wash the limes to remove wax. Slice off the stem ends and cut each lime into eight uniform wedges.
  2. Place lime wedges into a high-speed blender with 6 cups of cold water. Pulse 5–8 times until the water is cloudy and fragrant. Do not blend continuously to avoid releasing bitter compounds from the pith.
  3. Immediately pour the mixture through a fine-mesh sieve into a large pitcher. Use a spatula to press the lime solids to extract all liquid, then discard the rinds quickly.
  4. Return the strained lime water to the blender. Add the sweetened condensed milk, monk fruit sweetener, and crushed ice.
  5. Blend on high speed for 20-30 seconds until the drink is frothy and fully emulsified. Serve immediately over extra ice.
