Ingredients:

  • 1 lb English cucumber, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Slice the English cucumber into thin rounds (about 1/8 inch). Note: Thin slices absorb the dressing better
  2. Halve the cherry tomatoes and finely dice the red onion.
  3. Place all vegetables into a large mixing bowl.
  4. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, dried dill, garlic powder, salt, and pepper.
  5. Whisk until the mixture is smooth and glossy. Note: Ensure no garlic powder clumps remain
  6. Pour the dressing over the vegetables.
  7. Using a large spoon or spatula, gently fold the mixture from the bottom up.
  8. Continue folding until the vegetables are coated but tomatoes remain intact. Note: Avoid stirring vigorously to prevent mashing
  9. Serve immediately for maximum snap.
