Ingredients:

  • 1 large English Cucumber, diced (approx. 1 lb / 450g)
  • 2 cups Cherry Tomatoes, quartered (approx. 300g)
  • 1/4 cup Red Onion, finely diced (approx. 40g)
  • 2 tbsp Fresh Parsley, chopped (approx. 8g)
  • 1/2 tsp Kosher Salt (3g)
  • 1/2 cup Mayonnaise (115g)
  • 1/4 cup Greek Yogurt (60g)
  • 1 tbsp Lemon Juice (15ml)
  • 1 tsp Honey (5g)
  • 1/2 tsp Garlic Powder (2g)
  • 1/4 tsp Black Pepper (1g)

Instructions:

  1. Dice the cucumber into 1/2 inch cubes. Place them in a bowl and toss with 1/2 tsp of salt. Note: This starts the osmosis process to pull out water.
  2. Let the cucumbers sit for 5-10 minutes. until you see a pool of liquid at the bottom.
  3. Drain the liquid completely. You can pour it through a colander or just tip the bowl and spoon the water out.
  4. Add the quartered cherry tomatoes and finely diced red onion to the cucumber bowl.
  5. In a separate small bowl, combine the mayonnaise, Greek yogurt, lemon juice, honey, garlic powder, and black pepper.
  6. Whisk the dressing vigorously until it looks smooth and glossy.
  7. Pour the dressing over the vegetables. Use a folding motion to toss everything together. Note: Folding prevents the tomatoes from bruising or bursting.
  8. Fold in the chopped fresh parsley at the very end. until the green leaves are evenly distributed.
