Ingredients:
- 1.5 lbs cooked lobster meat (claw, knuckle, and tail), chopped into 1-inch chunks
- 1/4 cup high-quality mayonnaise
- 1 tbsp fresh lemon juice
- 1/4 cup finely diced celery
- 1 tbsp fresh chives, minced
- 1/4 tsp salt
- 1/4 tsp cracked black pepper
- 4 split top New England style hot dog buns
- 2 tbsp salted butter, softened
Instructions:
- Inspect the 1.5 lbs cooked lobster meat for any stray bits of shell or cartilage. Note: Be gentle to avoid tearing the beautiful claw pieces.
- Place the chunks in a bowl and refrigerate while you prep the other ingredients. Note: Cold meat is essential for the authentic Maine style.
- In a large bowl, whisk together the 1/4 cup mayonnaise, 1 tbsp lemon juice, 1/4 tsp salt, and 1/4 tsp pepper until smooth and creamy.
- Add the 1/4 cup diced celery and 1 tbsp minced chives to the mayo mixture.
- Add the chilled lobster to the dressing bowl and toss until every piece is glistening. Note: Don't over mix or the meat will break down.
- Spread the 2 tbsp softened butter generously on the outer flat sides of the 4 split top buns.
- Heat a skillet over medium heat and place the buns on their sides. Cook 2 mins until golden and shatter crisp. Flip and repeat on the other side.
- Open the warm buns carefully and stuff them generously with the lobster mixture.
- Sprinkle a few extra chives on top and serve immediately while the bun is still sizzling.
