Ingredients:
- 3 large (600g) yellow onions, thinly sliced
- 3 tbsp (42g) unsalted butter
- 1 tsp (2g) dried thyme
- ½ tsp (3g) kosher salt
- 3 lbs (1.36kg) sweet potatoes, peeled and sliced into 1/8-inch rounds
- 2 tbsp (28g) unsalted butter, melted
- 3 cloves (9g) garlic, minced
- ½ tsp (3g) black pepper
- 1 cup (240ml) heavy cream
- ½ cup (120ml) beef broth
- 1 tbsp (16g) cornstarch
- 2 cups (225g) Gruyère cheese, shredded
- ¼ cup (25g) Parmesan cheese, freshly grated
Instructions:
- Melt 3 tbsp (42g) of butter in a sauté pan over medium-low heat.
- Add sliced onions and salt. Cook, stirring occasionally, for 40 minutes until the onions are a deep mahogany-brown and smell intensely sweet and nutty.
- Stir in thyme during the last 2 minutes of caramelizing onions, then remove from heat.
- Preheat your oven to 375°F (190°C).
- Toss the sweet potato rounds with melted butter, minced garlic, and black pepper in a large bowl until evenly coated.
- Arrange the slices in the baking dish, overlapping them slightly in a shingled pattern.
- In a small bowl, whisk cornstarch into the beef broth until dissolved, then stir in the heavy cream.
- Pour the cream mixture evenly over the potatoes.
- Top with the caramelized onions, followed by the shredded Gruyère and Parmesan.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for another 15–20 minutes until the cheese is bubbling and has formed a golden-brown, shattering crust.
