Ingredients:

  • 1 cup (245g) Plain Greek Yogurt
  • 2 tbsp (42g) Honey
  • 1 tsp (5ml) Vanilla Extract
  • 1/2 cup (75g) Fresh Blueberries
  • 1/4 cup (35g) Mini Chocolate Chips
  • 1 tbsp (8g) Chia Seeds

Instructions:

  1. In a medium mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir vigorously with a spatula until the mixture is completely smooth and the sweetener is fully incorporated.
  2. Gently fold in the fresh blueberries and mini chocolate chips. Be careful not to over-mix to keep the berries whole.
  3. Line a baking sheet with parchment paper. Spoon approximately 1-2 tablespoons of the mixture onto the sheet, forming small, rounded clusters spaced 1 inch (2.5cm) apart.
  4. Place the baking sheet in the freezer for at least 4 hours, or until the bites are firm to the touch and no longer tacky.
  5. Peel the bites off the parchment paper and transfer them immediately to a storage container.
