Ingredients:

  • 1 lb (450g) lean ground turkey
  • ½ cup (60g) finely grated carrots
  • ½ cup (60g) finely grated zucchini, squeezed dry
  • ¼ cup (30g) almond flour
  • 1 large (50g) egg
  • ½ tsp (3g) garlic powder
  • ½ tsp (3g) onion powder
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) black pepper
  • 2 tbsp (30ml) olive oil
  • ½ cup (120g) plain Greek yogurt
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5g) honey
  • Pinch (1g) of salt

Instructions:

  1. Place the ground turkey, garlic powder, onion powder, salt, and pepper into the food processor and pulse until the meat is a smooth, paste-like consistency.
  2. Add the grated carrots and zucchini to the processor and pulse 3-4 times until combined.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Transfer the turkey mixture to a bowl and stir in the egg and almond flour until a thick, cohesive dough forms.
  5. Scoop 1 tablespoon of mixture, roll into a small ball, and flatten slightly into a disc on the baking sheet.
  6. Lightly brush the tops of the bites with olive oil and bake for 18-20 minutes until edges are mahogany-colored and centers are firm.
  7. Whisk together the Greek yogurt, lemon juice, honey, and salt in a small container until smooth.
