Ingredients:

  • 1 lb ground beef (80/20)
  • 1/2 lb ground pork
  • 1/2 cup plain breadcrumbs
  • 1/4 cup whole milk
  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp dried Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. In a large mixing bowl, whisk together the milk, breadcrumbs, egg, Parmesan cheese, minced garlic, chopped parsley, and seasonings. Let the mixture sit for 2 minutes to allow breadcrumbs to hydrate.
  2. Add the ground beef and ground pork to the bowl. Using your hands or a fork, gently fold the meat into the binder until just combined. Do not overmix or knead the meat.
  3. Roll the mixture into 2-inch balls (approximately 16 meatballs).
  4. To bake: Preheat oven to 400°F (200°C), place meatballs on a lined baking sheet, and bake for 15–20 minutes. To sear: Heat 2 tbsp oil in a skillet over medium-high and brown for 3–4 minutes per side.
  5. Cook until meatballs spring back slightly when touched and reach an internal temperature of 160°F (71°C).
