Ingredients:
- 1 can (14 oz / 397g) sweetened condensed milk
- 1/2 cup (120ml) fresh Key lime juice
- 1 tbsp (6g) lime zest
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) fine sea salt
- 2 cups (480ml) heavy whipping cream
- 1 cup (100g) graham cracker crumbs
- 3 tbsp (42g) unsalted butter
- 2 tbsp (25g) brown sugar
Instructions:
- In a large bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, vanilla, and salt until the mixture is smooth and glossy.
- Combine graham cracker crumbs, melted butter, and brown sugar in a small skillet over medium heat. Toast for 3–5 minutes, stirring constantly, until deep golden brown. Remove from heat and let cool completely.
- In a separate chilled bowl, beat the heavy cream on medium-high speed until stiff peaks form. Gently fold the whipped cream into the lime base using a figure-eight motion. Fold in half of the toasted graham crumbs.
- Pour the mixture into a freezer-safe container. Sprinkle the remaining graham cracker crumbs over the top, lightly pressing them in. Cover the surface with parchment paper and seal with a lid. Freeze for at least 6 hours.
