Ingredients:

  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1/2 cup (120ml) fresh Key lime juice
  • 1 tbsp (6g) lime zest
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 2 cups (480ml) heavy whipping cream
  • 1 cup (100g) graham cracker crumbs
  • 3 tbsp (42g) unsalted butter
  • 2 tbsp (25g) brown sugar

Instructions:

  1. In a large bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, vanilla, and salt until the mixture is smooth and glossy.
  2. Combine graham cracker crumbs, melted butter, and brown sugar in a small skillet over medium heat. Toast for 3–5 minutes, stirring constantly, until deep golden brown. Remove from heat and let cool completely.
  3. In a separate chilled bowl, beat the heavy cream on medium-high speed until stiff peaks form. Gently fold the whipped cream into the lime base using a figure-eight motion. Fold in half of the toasted graham crumbs.
  4. Pour the mixture into a freezer-safe container. Sprinkle the remaining graham cracker crumbs over the top, lightly pressing them in. Cover the surface with parchment paper and seal with a lid. Freeze for at least 6 hours.
