Ingredients:
- 2 cups (450g) cold leftover mashed potatoes
- 1 large (50g) egg, lightly beaten
- 1/4 cup (30g) all-purpose flour
- 1/2 cup (50g) shredded sharp cheddar cheese
- 2 tbsp (10g) fresh chives, finely chopped
- 1/4 tsp (1.5g) garlic powder
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (30ml) neutral oil
- 1 tbsp (14g) unsalted butter
Instructions:
- In a large bowl, combine the cold mashed potatoes, beaten egg, flour, cheese, chives, and spices. Stir until a stiff batter forms.
- Scoop approximately 1/4 cup (60ml) of the mixture and roll into a ball. Gently press down with the palm of your hand to create a patty about 3/4 inch (2cm) thick.
- Heat the oil and butter in the skillet over medium-high heat until the butter stops foaming and the oil shimmers.
- Carefully place the patties in the pan, leaving space between them. Cook for 3–4 minutes per side until the edges are a deep golden brown and the center feels firm.
