Ingredients:

  • 2 cups (450g) cold leftover mashed potatoes
  • 1 large (50g) egg, lightly beaten
  • 1/4 cup (30g) all-purpose flour
  • 1/2 cup (50g) shredded sharp cheddar cheese
  • 2 tbsp (10g) fresh chives, finely chopped
  • 1/4 tsp (1.5g) garlic powder
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (30ml) neutral oil
  • 1 tbsp (14g) unsalted butter

Instructions:

  1. In a large bowl, combine the cold mashed potatoes, beaten egg, flour, cheese, chives, and spices. Stir until a stiff batter forms.
  2. Scoop approximately 1/4 cup (60ml) of the mixture and roll into a ball. Gently press down with the palm of your hand to create a patty about 3/4 inch (2cm) thick.
  3. Heat the oil and butter in the skillet over medium-high heat until the butter stops foaming and the oil shimmers.
  4. Carefully place the patties in the pan, leaving space between them. Cook for 3–4 minutes per side until the edges are a deep golden brown and the center feels firm.
