Ingredients:
- 2 lbs carrots, peeled and sliced into 2-inch batons
- 0.5 tsp kosher salt
- 0.25 cup dark brown sugar, packed
- 0.25 cup real maple syrup
- 4 tbsp unsalted butter, cubed
- 1 tsp ground cinnamon
- 0.125 tsp ground nutmeg
Instructions:
- Peel the carrots and cut them into uniform 2-inch pieces. If the carrots are very thick, halve them lengthwise before cutting into segments to ensure even cooking.
- Place the prepared carrot batons directly into the slow cooker insert.
- In a small bowl, combine the 0.25 cup (50g) dark brown sugar, 1 tsp (2g) cinnamon, and 0.125 tsp (0.5g) nutmeg.
- Pour the 0.25 cup (60ml) real maple syrup over the carrots.
- Sprinkle the sugar and spice mixture evenly over the carrots. Do not stir yet.
- Cut the 4 tbsp (55g) butter into small cubes and dot them across the surface. Note: Placing butter on top allows it to baste the carrots as it melts.
- Cover and cook on LOW for 3 hours Cook until a fork easily pierces the thickest carrot baton.
