Ingredients:

  • 2 lbs carrots, peeled and sliced into 2-inch batons
  • 0.5 tsp kosher salt
  • 0.25 cup dark brown sugar, packed
  • 0.25 cup real maple syrup
  • 4 tbsp unsalted butter, cubed
  • 1 tsp ground cinnamon
  • 0.125 tsp ground nutmeg

Instructions:

  1. Peel the carrots and cut them into uniform 2-inch pieces. If the carrots are very thick, halve them lengthwise before cutting into segments to ensure even cooking.
  2. Place the prepared carrot batons directly into the slow cooker insert.
  3. In a small bowl, combine the 0.25 cup (50g) dark brown sugar, 1 tsp (2g) cinnamon, and 0.125 tsp (0.5g) nutmeg.
  4. Pour the 0.25 cup (60ml) real maple syrup over the carrots.
  5. Sprinkle the sugar and spice mixture evenly over the carrots. Do not stir yet.
  6. Cut the 4 tbsp (55g) butter into small cubes and dot them across the surface. Note: Placing butter on top allows it to baste the carrots as it melts.
  7. Cover and cook on LOW for 3 hours Cook until a fork easily pierces the thickest carrot baton.
