Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 3 drops green food coloring
  • 6 oz semi-sweet chocolate

Instructions:

  1. In a large bowl, combine the whole milk, sugar, and salt. Whisk vigorously for 2-3 minutes until the mixture looks smooth and sugar granules are dissolved.
  2. Stir in the heavy cream, peppermint extract, and vanilla extract. Add food coloring if desired and stir until the color is uniform.
  3. Pour the mixture into your ice cream maker and churn according to manufacturer's instructions (usually 15-25 minutes) until it reaches a soft-serve consistency.
  4. During the last 2 minutes of churning, pour in the finely chopped chocolate, or fold it in manually using a rubber spatula after churning.
  5. Transfer the ice cream to an airtight freezer container and press parchment paper onto the surface to prevent ice crystals before freezing for at least 4 hours.
