Ingredients:
- 2 large (approx. 1 lb / 450g) English cucumbers, diced
- 2 cups (300g) cherry tomatoes, halved
- 1/2 cup (75g) crumbled feta cheese
- 1/4 cup (15g) red onion, finely diced
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) red wine vinegar
- 1/2 tsp (3g) dried oregano
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1g) cracked black pepper
Instructions:
- Wash all vegetables thoroughly. Dice the cucumbers into 1/2 inch cubes, halve the cherry tomatoes, and finely dice the red onion. Note: Uniform sizes ensure every bite has every flavor.
- Combine the olive oil, red wine vinegar, oregano, salt, and pepper in a small jar.
- Shake the jar vigorously until the dressing looks opaque and creamy. Note: This prevents the oil from floating on top.
- Place the diced cucumbers, halved tomatoes, and diced onions in a large mixing bowl.
- Pour the dressing over the vegetables and toss gently with a spatula.
- Toss for about 1 minute until the vegetables are glistening.
- Fold in the crumbled feta cheese using a light hand. Note: Use a lift and fold motion to keep the cheese in chunks.
- Serve immediately or let it sit for 10 minutes to let the flavors meld.
