Ingredients:

  • 2 oz deli turkey breast, cut into pea-sized bites
  • 1 hard-boiled egg, peeled and quartered
  • 2 tbsp hummus
  • 1/2 cup blueberries, sliced lengthwise
  • 1/4 cup cucumber, peeled and diced
  • 1/4 cup steamed carrot coins, chilled
  • 1/4 cup whole grain crackers
  • 1 oz mild cheddar cheese, cubed

Instructions:

  1. Slice all round foods (such as blueberries or carrots) lengthwise into quarters and dice the protein and cheese into uniform, pea-sized pieces to ensure they are easy to chew and swallow.
  2. Place the diced turkey and the hard-boiled egg in the largest compartment of the bento box to act as the meal anchor.
  3. Nestle the cheddar cheese cubes snugly against the protein to prevent the contents from shifting during transport.
  4. Fill the smaller compartments with produce: place cucumbers and carrots in one section and blueberries in another.
  5. Place the hummus in the center or in a dedicated small airtight container.
  6. Tuck the whole grain crackers into the remaining gaps and seal the lid firmly to keep textures crisp.
