Ingredients:
- 2 oz deli turkey breast, cut into pea-sized bites
- 1 hard-boiled egg, peeled and quartered
- 2 tbsp hummus
- 1/2 cup blueberries, sliced lengthwise
- 1/4 cup cucumber, peeled and diced
- 1/4 cup steamed carrot coins, chilled
- 1/4 cup whole grain crackers
- 1 oz mild cheddar cheese, cubed
Instructions:
- Slice all round foods (such as blueberries or carrots) lengthwise into quarters and dice the protein and cheese into uniform, pea-sized pieces to ensure they are easy to chew and swallow.
- Place the diced turkey and the hard-boiled egg in the largest compartment of the bento box to act as the meal anchor.
- Nestle the cheddar cheese cubes snugly against the protein to prevent the contents from shifting during transport.
- Fill the smaller compartments with produce: place cucumbers and carrots in one section and blueberries in another.
- Place the hummus in the center or in a dedicated small airtight container.
- Tuck the whole grain crackers into the remaining gaps and seal the lid firmly to keep textures crisp.
