Ingredients:

  • 1 lb fresh strawberries, hulled and halved
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • 1/2 cup natural peanut butter

Instructions:

  1. Place the strawberries and lemon juice in the blender. Process until completely smooth with no visible seeds.
  2. Pour the mixture into a saucepan over medium heat. Simmer for 10–15 minutes, stirring occasionally, until the mixture has thickened by about 20% and looks like a heavy syrup.
  3. Preheat your oven to 170°F (75°C) and line a baking sheet with parchment paper or a silicone mat.
  4. Pour the reduced puree onto the center of the sheet. Use an offset spatula to spread it into a rectangle, ensuring the edges are slightly thicker than the center.
  5. Bake for 2.5 to 3 hours. The leather is done when the center is tacky but does not stick to your finger.
  6. Allow the leather to cool completely. Peel it carefully from the mat and cut it into 6 equal strips.
  7. Spread a thin, even layer of peanut butter across each strip and roll tightly from one end to the other.
