Ingredients:
- 1 lb fresh strawberries, hulled and halved
- 1 tbsp lemon juice
- 2 tbsp honey
- 1/2 cup natural peanut butter
Instructions:
- Place the strawberries and lemon juice in the blender. Process until completely smooth with no visible seeds.
- Pour the mixture into a saucepan over medium heat. Simmer for 10–15 minutes, stirring occasionally, until the mixture has thickened by about 20% and looks like a heavy syrup.
- Preheat your oven to 170°F (75°C) and line a baking sheet with parchment paper or a silicone mat.
- Pour the reduced puree onto the center of the sheet. Use an offset spatula to spread it into a rectangle, ensuring the edges are slightly thicker than the center.
- Bake for 2.5 to 3 hours. The leather is done when the center is tacky but does not stick to your finger.
- Allow the leather to cool completely. Peel it carefully from the mat and cut it into 6 equal strips.
- Spread a thin, even layer of peanut butter across each strip and roll tightly from one end to the other.
