Ingredients:
- 3 cups (450g) cooked chicken, shredded
- 1 can (10.5 oz / 298g) condensed cream of chicken soup
- 1 cup (240g) sour cream
- 1 tbsp (9g) poppy seeds
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 sleeve (1.5 oz / 42g) Ritz crackers, coarsely crushed
- 4 tbsp (56g) unsalted butter, melted
- 1 tbsp (9g) poppy seeds
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the condensed soup, sour cream, 1 tablespoon of poppy seeds, salt, and pepper until the texture is velvety and smooth.
- Fold in the shredded chicken until evenly coated, then spread the mixture into a 9x13 inch baking dish, smoothing the top with a spatula.
- In a separate bowl, combine the crushed Ritz crackers with the melted butter and the remaining 1 tablespoon of poppy seeds. Stir gently until the crackers are evenly coated.
- Sprinkle the cracker mixture over the chicken base in an even layer.
- Bake for 25 to 30 minutes until the edges are bubbling and the topping is deep golden brown.
- Let the casserole rest for 5 minutes before serving to allow the sauce to set.
