Ingredients:

  • 3 cups (450g) cooked chicken, shredded
  • 1 can (10.5 oz / 298g) condensed cream of chicken soup
  • 1 cup (240g) sour cream
  • 1 tbsp (9g) poppy seeds
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 sleeve (1.5 oz / 42g) Ritz crackers, coarsely crushed
  • 4 tbsp (56g) unsalted butter, melted
  • 1 tbsp (9g) poppy seeds

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the condensed soup, sour cream, 1 tablespoon of poppy seeds, salt, and pepper until the texture is velvety and smooth.
  3. Fold in the shredded chicken until evenly coated, then spread the mixture into a 9x13 inch baking dish, smoothing the top with a spatula.
  4. In a separate bowl, combine the crushed Ritz crackers with the melted butter and the remaining 1 tablespoon of poppy seeds. Stir gently until the crackers are evenly coated.
  5. Sprinkle the cracker mixture over the chicken base in an even layer.
  6. Bake for 25 to 30 minutes until the edges are bubbling and the topping is deep golden brown.
  7. Let the casserole rest for 5 minutes before serving to allow the sauce to set.
