Ingredients:
- 6 large (approx. 3 lbs / 1.36kg) Granny Smith apples, peeled, cored, and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground ginger
- 1 tbsp (15ml) lemon juice
- 1 cup (90g) old-fashioned rolled oats
- 3/4 cup (95g) all-purpose flour
- 3/4 cup (150g) packed light brown sugar
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, chilled and cubed
- 1/2 cup (60g) chopped walnuts or pecans
Instructions:
- Lightly grease the interior of your slow cooker with cooking spray to prevent the edges from sticking.
- In a large bowl, whisk together the sugar, cornstarch, cinnamon, and ginger. Add the sliced apples and lemon juice, tossing until every slice is evenly coated.
- Transfer the apple mixture into the slow cooker, spreading them evenly.
- In a separate bowl, combine the oats, flour, brown sugar, and salt.
- Add the chilled butter cubes and use a fork or your fingers to rub the butter into the dry mix until coarse, pea-sized crumbs form. Stir in nuts if using.
- Sprinkle the topping evenly over the apples without pressing down.
- Place a thin cotton kitchen towel over the top of the apples, then place the lid firmly on top of the towel to absorb condensation.
- Set the slow cooker to Low for 3 hours or High for 1.5 hours.
- Remove the lid and towel. Continue cooking uncovered for an additional 30 minutes to allow the topping to set and the juices to thicken.
