Ingredients:

  • 1 lb rotisserie chicken, shredded or diced
  • 3 large hard-boiled eggs, chopped
  • 3/4 cup celery, finely diced
  • 1/4 cup red onion, minced
  • 1/4 cup sweet pickle relish
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 3/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Instructions:

  1. Dice the rotisserie chicken into uniform 1/2 inch cubes. Chop the hard boiled eggs into similarly sized pieces.
  2. In a medium bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, smoked paprika, garlic powder, salt, and pepper until the dressing is smooth and pale orange.
  3. Add the diced chicken, celery, onion, and relish to a large mixing bowl.
  4. Pour the prepared dressing over the top of the chicken mixture.
  5. Gently fold the ingredients together using a rubber spatula until everything is evenly coated but the eggs are still intact.
  6. Transfer the mixture to an airtight glass container.
  7. Cover and refrigerate for at least 60 minutes.
  8. Stir gently one last time before serving to redistribute any settled dressing.
