Ingredients:
- 1 lb rotisserie chicken, shredded or diced
- 3 large hard-boiled eggs, chopped
- 3/4 cup celery, finely diced
- 1/4 cup red onion, minced
- 1/4 cup sweet pickle relish
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 3/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
Instructions:
- Dice the rotisserie chicken into uniform 1/2 inch cubes. Chop the hard boiled eggs into similarly sized pieces.
- In a medium bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, smoked paprika, garlic powder, salt, and pepper until the dressing is smooth and pale orange.
- Add the diced chicken, celery, onion, and relish to a large mixing bowl.
- Pour the prepared dressing over the top of the chicken mixture.
- Gently fold the ingredients together using a rubber spatula until everything is evenly coated but the eggs are still intact.
- Transfer the mixture to an airtight glass container.
- Cover and refrigerate for at least 60 minutes.
- Stir gently one last time before serving to redistribute any settled dressing.
