Ingredients:

  • 4 large (200g) hard-boiled eggs, peeled
  • 1/2 small (50g) ripe avocado, pitted and peeled
  • 2 tbsp (30g) plain Greek yogurt (unsweetened)
  • 1 tsp (5ml) fresh lemon juice
  • 1/8 tsp (0.5g) paprika

Instructions:

  1. Place eggs in a saucepan and cover with one inch of water. Bring to a boil, then remove from heat, cover, and let sit for 10 minutes. Immediately plunge into an ice bath to stop the cooking process.
  2. In a mixing bowl, combine the avocado, Greek yogurt, and lemon juice. Use a fork to mash the avocado into the yogurt until the mixture is velvety and uniform in color.
  3. Roughly chop the hard-boiled eggs into small, toddler-safe pieces. Fold the eggs into the avocado-yogurt mixture gently, stirring until coated but still chunky.
