Ingredients:

  • 4 slices (120g) whole wheat bread
  • 2 tbsp (30g) unsalted butter, softened
  • 4 slices (112g) mild cheddar cheese
  • 1/4 cup (15g) minced steamed spinach

Instructions:

  1. Spread a thin, even layer of softened butter on one side of each bread slice.
  2. Flip the slices over and place two slices butter-side down on your workspace.
  3. Layer one slice of cheese on each bread slice, followed by the minced steamed spinach, and top with the remaining bread slices, butter-side up.
  4. Place the sandwiches in a skillet over medium-low heat and press down lightly with a spatula.
  5. Cook for 3-4 minutes per side until the exterior is mahogany-colored and crispy and the cheese has begun to bulge at the edges.
  6. Remove sandwiches from the pan and let them rest on a cutting board for 60 seconds to prevent cheese from oozing.
  7. Use a small cookie cutter or knife to slice the sandwiches into 1-inch squares or thin strips.
