Ingredients:

  • 1 cup (150g) English Cucumber, finely diced
  • 1 cup (180g) Roma Tomatoes, finely diced and deseeded
  • 1/2 cup (75g) Red Onion, finely diced
  • 1/4 cup (15g) Fresh Cilantro, chopped
  • 2 tbsp (30ml) Fresh Lime Juice
  • 1 tbsp (15ml) Extra Virgin Olive Oil
  • 1/4 tsp (1.5g) Kala Namak (Black Salt)
  • 1/4 tsp (1.5g) Sea Salt
  • 1/8 tsp (0.3g) Black Pepper
  • 1/2 tsp (1g) Roasted Cumin Powder

Instructions:

  1. Slice the tomatoes and scoop out the watery seeds with a spoon before dicing.
  2. Finely chop the cucumber, onion, and tomatoes into 1/4-inch cubes.
  3. Optional: Soak the diced onions in ice-cold water for 10 minutes, then drain and pat dry to reduce pungency.
  4. In a small bowl, combine the lime juice, olive oil, black salt, sea salt, black pepper, and roasted cumin powder.
  5. Whisk the dressing vigorously until the oil and lime juice are well emulsified.
  6. Place all diced vegetables and chopped cilantro into a large mixing bowl.
  7. Pour the dressing over the vegetables immediately before serving.
  8. Gently toss with a spoon until every cube is evenly coated.
