Ingredients:

  • 1 lb ground turkey (93% lean)
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1/4 tsp red pepper flakes
  • 1/4 tsp cayenne pepper
  • 1 tsp oil

Instructions:

  1. In a medium bowl, combine the ground turkey with the salt, pepper, dried sage, dried thyme, garlic powder, ground ginger, red pepper flakes, and cayenne pepper.
  2. Using a spatula, fold the ingredients together until just combined. Stop immediately once spices are distributed to prevent the meat from becoming rubbery.
  3. Divide the turkey mixture into 6 equal portions (approximately 2 oz each) and gently shape them into discs about 1/2 inch thick.
  4. Heat a non-stick or cast-iron skillet over medium-high heat with 1 teaspoon of oil.
  5. Place patties in the pan and sear for 4–5 minutes per side until a deep mahogany crust forms and the internal temperature reaches 165°F (74°C).
