Ingredients:
- 12 oz (340g) wide egg noodles
- 2 cups (300g) frozen mixed peas and carrots, thawed
- 1 cup (150g) corn kernels, drained
- 2 stalks (60g) celery, diced
- 1 medium (110g) yellow onion, finely diced
- 2 tbsp (28g) unsalted butter
- 4 tbsp (56g) unsalted butter
- 1/4 cup (32g) all-purpose flour
- 2 cups (480ml) whole milk, room temperature
- 1 tsp (5g) garlic powder
- 1/2 tsp (3g) smoked paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1/4 tsp (1g) ground nutmeg
- 1/2 cup (60g) Panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese
- 2 tbsp (28g) melted butter
- 1 tbsp (8g) fresh parsley, chopped
Instructions:
- Bring a large pot of salted water to a boil. Add the egg noodles and cook for 2 minutes less than the package directions so they remain al dente. Drain and place in a baking dish.
- In a skillet over medium heat, melt 2 tbsp of butter. Sauté the onion and celery until translucent (about 5 minutes). Stir in the peas, carrots, and corn, cooking until heated through.
- In the same skillet or a separate saucepan, melt 4 tbsp of butter. Whisk in the flour and cook for 1–2 minutes until the mixture smells nutty and turns a pale gold.
- Slowly pour in the milk, whisking constantly to prevent lumps. Simmer on low heat until the sauce thickens enough to coat the back of a spoon.
- Stir in the garlic powder, smoked paprika, salt, pepper, and nutmeg. Remove from heat.
- Pour the creamy sauce over the noodles and vegetables in the baking dish. Fold gently until every noodle is enveloped in the sauce.
- In a small bowl, combine Panko, Parmesan, melted butter, and parsley. Sprinkle evenly over the top.
- Bake at 375°F (190°C) for 20–25 minutes, or until the edges are bubbling and the crust is golden brown.
