Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) light brown sugar, packed
  • 1/4 cup (50g) granulated white sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 3/4 cups (210g) white whole wheat pastry flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (3g) sea salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper to ensure a non-stick surface and an even bake.
  2. Cream together the softened butter, brown sugar, and white sugar in a large bowl until the mixture looks pale and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Stir in the white whole wheat pastry flour, baking soda, and salt. Mix on low speed just until the flour streaks disappear.
  5. Fold in the chocolate chips by hand.
  6. Scoop rounded tablespoons of dough (about 1.5 oz / 42g each) and place them 2 inches apart on the sheets.
  7. Bake for 9–11 minutes. Look for edges that are golden brown while the centers still look slightly soft and underbaked.
  8. Remove from the oven immediately; the residual heat will finish the cooking process on the hot pan.
