Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (100g) granulated white sugar
  • 1 large (50g) egg, room temperature
  • 2 tsp (10ml) pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 tsp (3g) fine sea salt

Instructions:

  1. Beat the softened butter and granulated sugar on medium-high speed for about 3 minutes until the mixture looks pale and fluffy.
  2. Add the egg and vanilla extract, beating on low just until smooth.
  3. Sift the flour and salt directly into the butter mixture. Using a spatula or the lowest mixer setting, fold the ingredients together until no streaks of dry flour remain.
  4. Transfer the dough to a piping bag or roll it out. Shape the cookies on a lined baking sheet and place the entire tray in the freezer for 30 minutes to prevent spreading.
  5. Preheat oven to 350°F (175°C) and bake for 10–12 minutes until the bottom edges are very pale golden.
