Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1/2 cup (100g) granulated white sugar
- 1 large (50g) egg, room temperature
- 2 tsp (10ml) pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1/2 tsp (3g) fine sea salt
Instructions:
- Beat the softened butter and granulated sugar on medium-high speed for about 3 minutes until the mixture looks pale and fluffy.
- Add the egg and vanilla extract, beating on low just until smooth.
- Sift the flour and salt directly into the butter mixture. Using a spatula or the lowest mixer setting, fold the ingredients together until no streaks of dry flour remain.
- Transfer the dough to a piping bag or roll it out. Shape the cookies on a lined baking sheet and place the entire tray in the freezer for 30 minutes to prevent spreading.
- Preheat oven to 350°F (175°C) and bake for 10–12 minutes until the bottom edges are very pale golden.
