Ingredients:
- 2 cups (300g) fresh mango puree
- 2 tbsp (30ml) fresh lime juice
- 1/4 cup (50g) honey
- 2 cups (480ml) heavy whipping cream, chilled
- 1 tsp (5ml) vanilla extract
- 1g sea salt
Instructions:
- Place the mango chunks in a blender and process until completely smooth. Stir in the lime juice and honey.
- Pour the chilled heavy cream, vanilla, and salt into a cold bowl. Using an electric mixer on medium-high speed, whip the cream until soft peaks form.
- Gently pour the mango puree into the whipped cream. Using a spatula, use a fold motion to combine, preserving the air bubbles.
- Transfer the mixture into a freezer-safe container and smooth the top. Press a piece of parchment paper directly onto the surface of the cream to prevent ice crystals.
- Freeze for at least 6 hours.
