Ingredients:
- 15 oz (425g) pure pumpkin puree
- 1/2 cup (100g) light brown sugar, packed
- 1 large egg (50g)
- 1/2 cup (120ml) half-and-half
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1/4 tsp (1.5g) salt
- 1 cup (90g) old-fashioned rolled oats
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (100g) light brown sugar, packed
- 1/2 tsp (1g) ground cinnamon
- 1/2 cup (113g) unsalted butter, chilled and cubed
- 1/3 cup (40g) chopped pecans
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan with butter or line it with parchment paper.
- In a large bowl, whisk the egg and brown sugar together until the mixture is pale and slightly thickened.
- Stir in the pumpkin puree, half-and-half, cinnamon, nutmeg, and salt. Whisk until the mixture is completely smooth.
- Pour the filling into the prepared baking pan and smooth the top with a spatula.
- In a medium bowl, combine the rolled oats, all-purpose flour, brown sugar, and cinnamon.
- Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or forks to work the butter in until the mixture resembles coarse crumbs with pea-sized lumps.
- Fold in the chopped pecans.
- Evenly sprinkle the crumble mixture over the pumpkin filling.
- Bake for 30 minutes or until the topping is golden brown.
- Remove from the oven and let the crisp rest for 15 minutes before serving to allow the custard to set.
