Ingredients:

  • 1/2 cup (115g) granulated sugar
  • 2 tablespoons (15g) dry milk powder
  • 1/4 teaspoon (1g) xanthan gum
  • 2 tablespoons (40g) light corn syrup
  • 1 1/3 cups (330ml) whole milk
  • 1 1/3 cups (330ml) heavy cream

Instructions:

  1. In a small bowl, combine the granulated sugar, dry milk powder, and xanthan gum. Whisk these together thoroughly to prevent the xanthan gum from clumping.
  2. Pour the whole milk and light corn syrup into a large mixing bowl. Slowly whisk in the dry blend until the sugar is completely dissolved.
  3. Stir in the heavy cream and whisk until the mixture is homogeneous and looks like a thick, pale cream.
  4. Cover the mixture and refrigerate for at least 4 hours (preferably overnight) to ensure the base is ice-cold before churning.
  5. Pour the chilled base into your ice cream maker and churn according to manufacturer directions until it reaches a soft serve consistency.
