Ingredients:
- 1/2 cup (115g) granulated sugar
- 2 tablespoons (15g) dry milk powder
- 1/4 teaspoon (1g) xanthan gum
- 2 tablespoons (40g) light corn syrup
- 1 1/3 cups (330ml) whole milk
- 1 1/3 cups (330ml) heavy cream
Instructions:
- In a small bowl, combine the granulated sugar, dry milk powder, and xanthan gum. Whisk these together thoroughly to prevent the xanthan gum from clumping.
- Pour the whole milk and light corn syrup into a large mixing bowl. Slowly whisk in the dry blend until the sugar is completely dissolved.
- Stir in the heavy cream and whisk until the mixture is homogeneous and looks like a thick, pale cream.
- Cover the mixture and refrigerate for at least 4 hours (preferably overnight) to ensure the base is ice-cold before churning.
- Pour the chilled base into your ice cream maker and churn according to manufacturer directions until it reaches a soft serve consistency.
