Ingredients:
- 2 lbs butternut squash, peeled and cubed
- 1 lb smoked Italian or Apple chicken sausage, sliced into rounds
- 1 medium red onion, cut into 1-inch chunks
- 3 cloves garlic, smashed and peeled
- 3 tbsp extra-virgin olive oil
- 1 tbsp maple syrup
- 1 tsp dried rosemary or thyme
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the cubed butternut squash, sliced sausage, red onion, and smashed garlic.
- Pour the extra-virgin olive oil, maple syrup, dried herbs, salt, and black pepper over the ingredients. Toss thoroughly until everything is evenly coated and glossy.
- Spread the mixture onto the prepared sheet pan in a single layer, ensuring pieces are not touching too closely to allow for proper roasting.
- Roast in the oven for 15 minutes. Remove the pan and use tongs to flip the squash and toss the ingredients.
- Return the pan to the oven and roast for another 15 minutes until the squash edges are charred and the sausage is deeply browned.
- Remove from the oven and let the meal rest for 5 minutes to allow the juices to settle before serving.
