Ingredients:

  • 1 cup (150g) fresh strawberries, hulled and quartered
  • 1 cup (150g) fresh blueberries, halved
  • 1 cup (160g) cantaloupe, diced into small cubes
  • 2 kiwis, peeled and diced
  • 1 cup (160g) mango, diced
  • 1 cup (150g) seedless grapes, quartered lengthwise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (20g) maple syrup
  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

  1. Wash all produce thoroughly under cold water.
  2. Cut the strawberries into quarters using your chef's knife.
  3. Quarter the grapes lengthwise. Note: Never cut grapes into round coins; long strips are the safest way.
  4. Dice the mango into 1/4 inch cubes.
  5. Dice the cantaloupe into 1/4 inch cubes.
  6. Peel the kiwis and dice them into 1/4 inch cubes.
  7. Slice the blueberries in half.
  8. Place all the prepared fruit into your large mixing bowl.
  9. In a separate small bowl, whisk the lemon juice, maple syrup, and vanilla extract until the mixture is smooth and velvety.
  10. Drizzle the glaze over the fruit and use your silicone spatula to gently fold everything together until the fruit has a glistening sheen.
